When I was first diagnosed with NMOSD (Neuromyelitis Optica), I quickly realized that my body needed more than just medication. It needed the right fuel to reduce inflammation. Many people struggle with autoimmune symptoms like chronic fatigue or skin flare-ups without realizing how much their diet plays a role.

Since nightshades (like white potatoes) and grains (like wheat) are off-limits in the Autoimmune Protocol, I had to get creative. Today, I’m sharing a favorite from my AIP meal plan: Cassava Gnocchi in a creamy cauliflower-sage sauce.

What many people don’t realize is that the AIP diet helps with more than just major autoimmune diagnoses. For years, I suffered from chronic eczema and various unexplained inflammatory symptoms. To my surprise, my skin cleared up completely once I changed my eating habits. Today, I am eczema-free, and my autoimmune disease is in remission. This recipe is proof that you can support your body’s healing process while still enjoying every bite.
Why Cassava is a Superfood for Autoimmunity
Most anti-inflammatory recipes focus solely on meat and vegetables. While those are great, sometimes you just need comfort food. Cassava is a root vegetable that is naturally gluten-free and grain-free. It provides that soft, “pillowy” texture we love in classic Italian gnocchi. Plus, it’s incredibly gentle on the gut, which is vital for anyone dealing with leaky gut or autoimmune-related inflammation.
Ingredients (100% AIP & Paleo Proof)
For the gnocchi:
- 500g Cassava: (Fresh or frozen). A great nightshade-free potato alternative.
- 50-70g Cassava flour: Plus extra for dusting.
- Pinch of Sea Salt: Use Celtic sea salt for essential minerals.
For the creamy dairy-free sauce:
- 200g Cauliflower florets: The base for our AIP cream sauce.
- 100ml Coconut milk: Full-fat and additive-free.
- 1 clove of Garlic: Natural anti-microbial properties.
- Fresh Sage & Extra Virgin Olive Oil.
Step-by-Step Instructions: How to make AIP Gnocchi
- Prepare the Cassava: Boil the cassava until it is tender all the way through. Drain and mash the cassava immediately while it is still warm. Gradually mix in the cassava flour and salt until a smooth dough forms. You’re looking for a texture that no longer sticks to your hands—this is the secret to perfect grain-free gnocchi.
- Roll and Cut: Dust your work surface with a little extra flour. Roll the dough into long strands (about 2 cm thick) and cut them into small pillows. For that authentic look, gently press a fork into each piece to create those signature ridges that hold the sauce.
- The Creamy Sauce: While your water boils, blend the cooked cauliflower, coconut milk, garlic, and a pinch of salt. This creates a dairy-free white sauce that is so rich and silky, you won’t believe it’s made from vegetables!
- The Finish: Boil the gnocchi in salted water until they float (about 2 minutes). Meanwhile, fry the sage leaves in olive oil until crispy. Toss the gnocchi into the pan with the sage to give them a beautiful golden crust. Serve immediately with the warm cauliflower sauce.
