AIP Breakfast Pizza Recipe: The best way to start your day
Are you tired of the same old soups, stews, or smoothies for breakfast? I often hear from my followers that missing a “real” breakfast—something you can actually sink your teeth into—is the hardest part of the AIP protocol.
Today, I’m doing things differently. No porridge, no soup, but… Pizza! This AIP Breakfast Pizza features a crispy white sweet potato crust and is topped with savory, fresh ingredients that will give you energy all morning without bothering your gut.
Why this works
The crust is free from grains, pseudo-grains, and eggs. By using white sweet potato (which is starchier and less sweet than the orange variety), the pizza gets a savory character that pairs perfectly with salty toppings like prosciutto.
The Recipe
Servings: 1 person Prep time: 10 mins Cook time: 20 mins
Ingredients:
- 250g white sweet potato (grated and squeezed dry in a clean kitchen towel!)
- 2 tbsp cassava flour
- 1 tbsp coconut oil (melted)
- 1 tsp dried thyme
- Pinch of Celtic sea salt
Toppings (be creative!):
- Prosciutto or crispy organic bacon
- Fresh arugula (rocket)
- Sliced avocado
- Optional: fresh figs or pear slices for a sweet accent
Instructions:
- Preheat your oven to 200°C.
- Mix the grated potato with the cassava flour, oil, thyme, and salt until it forms a dough.
- On a baking sheet lined with parchment paper, press the dough into a circle about 0.5 cm thick.
- Bake for 15-20 minutes until the edges are golden brown and crispy.
- Remove from the oven and top with the prosciutto, arugula, and avocado.
